Oscietra Caviar from KAVIARI
This mythical Russian sturgeon is the fish that produces the most variable eggs: size, colour and flavour vary from one fish to another. It weighs between 20 and 80 kg.
Color amber to gold.
Texture rounded grains that are both firm and sensual, regular and rolling.
Grains small to medium (2 to 3.5 mm).
Taste subtle and marine flavours. Wonderful long, delicate hazelnut tones.

« Caviar with good-sized, even, amber roe. To the eye the individual roe shine grey with flecks of golden brown. In the mouth they explode with a series of flavours. The smooth outer layer releases several long hazelnut and slightly-salty flavours of the sea ».
Caviar should ideally be consumed using a spoon made from mother of pearl or horn, never metal. It can be served on toasted bread, blinis, or simply by itself, an ideal way to fully appreciate its flavours. Enjoy the caviar in small quantities, letting the roe burst against your palate, releasing its delicate flavour. Serve 15-30g as an appetiser.
