This is our Raspberry & Lime Christmas Log!

Celebrate 2026 with a refreshing creation of 1.5kg:  an intense raspberry confit heart, resting on a soft almond biscuit and an almond praline croustillant kissed with fleur de sel, enrobed in silky white chocolate ganache with zesty lime. Coated in a white chocolate rocher glaze, finished with white chocolate ganache, fresh raspberry, and a touch of lime zest.

Ingredients: 

Raspberry, sugar, pectin, corn flakes, white chocolate, almond, sea salt flakes, gelatine, water, cream, lime juice, almond powder, butter, eggs, icing sugar, flour, oil.

Size is for 8/10 people
