Tripe Sausage

Ingredients:  Pork tripes, pork jowls, white wine, mustard, onions, salt, herbs and spices.

Our cooking idea:

This sausage called Andouillette in French can be simply grilled, slowly fried or oven-baked, with a bit of mustard or with a wine sauce.

It would be perfect with potatoes such as french fries, roasted potatoes, and a green salad.
